Coconut French Toast - Baked French Toast

This Coconut French Toast will be a wonderful change to your breakfast table.   It is easy to prepare with a prep time of less than 20 minutes.  Making this recipe with a day or two old bread is best, and to top off this fantastic breakfast with fresh pineapple or carmelize it on a skillet will be well worth the effort.   The mango salsa simply adds another great flavor to this recipe.  In this baked french toast recipe you will have your family and friends saying wow, because its nothing like they have ever had.  

Directions:

 

SALSA

1) In a small mixing bowl or plate, add the coconut flakes, lime juice, chopped mangoes and strawberries and mix together. Cover with plast wrap and refrigerate. 

FRENCH TOAST

2) Preheat oven to 400 degrees F. 

3) In a large bowl, add the 3 eggs and 3 eggs whites, coconut milk, 1 cup of milk, granulated sugar, vanilla extract.  Whisk all the ingredients together, until well combined. 

4) Cut the french bread into 1 inch thick slices and soak each piece of bread in the egg/milk mixture.  Allow fot he bread to soak for about 10 minutes. 

5) Take an oven safe baking dish and spray with cooking spray. 

6) Arrange the soaked french toast slices in the baking dish. (single layer) 

7) Bake in the preheated 400 degrees F oven for 10 to 12 minutes or until set. 

8) Take a large pan and spray with cooking spray on medium high heat.  Place the pineapple slices and cook for about 3 minutes on each side. 

9) Remove the baked french toast from the oven and serve on a plate, with a slice of pineapple and dust with powdered sugar and the mango coconut salsa. 

10) Enjoy!

  1. 2 tablespoon flaked sweetened coconut
  2. 1 teaspoon fresh lime juice
  3. 1 large ripe mango, chopped
  4. 1/2 pound strawberries, chopped
  5. 3 large eggs
  6. 3 large egg whites
  7. 1 cup coconut milk
  8. 1 cup milk
  9. 1/2 cup granulated sugar
  10. 1/2 teaspoon vanilla extract
  11. 1 large french bread loaf, cut into 1 inch thick pieces
  12. cooking spray
  13. 1 15 ounce can pineapple, slices
  14. 2 tablespoons powdered sugar
