They are fantastic, especially on a hot summers day, it will definitely hit the spot. Perfect kid friendly recipe, but if you are making a batch for the adults, you can add a little bit of your favorite liquor to spike it up a bit. Make sure to label them spiked if you have children in your home, so that there is no confusion. These ice pops can also be made with a variety of fruits, for instance, instead of using blueberries, you could use strawberries, and instead of the blueberry juice, you can use orange juice, to make a strawyberry orange and banana pops. The yogurt gives it a little bit of creaminess and brings all the ingredients together, and the use of honey instead of sugar is a wonderfully healthy addition. If you do not use honey, then perhaps some agave would be a good substitute. Whatever you decide to include or exclude in the recipe, the outcome should be splendid.
1) Using a blender, add the frozen blueberries, frozen banana slices, 2 cups of the blueberry juice, vanilla yogurt and honey to sweeten it all. Blend together just like making a smoothie.
2) Pour the mixture into popsickle molds and place in the freezer for 10 hours.
3) Check on the pops to see if they are set and frozen, remove from the popsickle mold and serve.
