Bulgur Pilaf Salad with Roasted Vegetables Recipe

Bulgur Pilaf Salad with Roasted Vegetables Recipe - Roasting vegetables is a healthy choice as there is minimal amount of fat and whole grain bulgur combined together as a salad or serve it as a pilaf. The simple dressing is lemon zest, lemon juice, salt and black pepper and fresh cilantro also known as coriander.  Its light and fat free and a perfect addition to your diet.


1) Preheat Oven at 350 degrees F.

2) In a mixing bowl, add the eggplant, onion, red bell pepper, and pour the oil over the vegetables.  Mix together to coat.

3) Transfer to a roasting pan or cookie sheet. Roast in the oven until tender. Roast for 35 minutes.

4) Heat the broth or stock, place the bulgur into a large bowl, and pour the hot broth ontop of the bulgur. Mix together well and set aside for 20 minutes.  Once the bulgur is tender then it is ready. (If there is any excess broth, then drain in a fine colander)

5) Add the roasted eggplants, onion, and red pepper with the bulgur as well as the lemon zest, lemon juice, cilantro, salt and black pepper to taste.  Mix together well.

6) Place into serving platter or dish and serve!


  1. 2 red bell pepper, halved, seeded, cut into small pieces
  2. 2 small eggplant, cut into small pieces
  3. 2 red onions, halved, cut into thick wedges
  4. 1/4 cup extra virgin olive oil
  5. 1/2 cup, bulgur
  6. 3/4 cup vegetable stock
  7. 1 tbs zest of a lemon
  8. 1/4 cup fresh lemon juice
  9. 1 bunch cilantro (Coriander), roughly chopped
