Bulgur Pomegranate Pilaf Salad Recipe

Bulgur Pomegranate Pilaf Salad Recipe - Master your kitchen with cooking great food that are not only delicious but good for you. Topped with fresh herbs and spices makes this a wonderful presentation on your lunch, brunch or dinner table.


1)  In a medium size mixing bowl add the fine bulgur and pour ontop enough water to 1/2 inch below surface.  Give a good mix with a spoon and allow to sit for 10 minutes or until tender.  (If there is to much water in the bowl after 10 minutes, then drain in a fine colander. ) (If to dry and not tender, allow to sit longer, and add additional water as needed)

2) Meanwhile prepare the dressing by adding to a small mixing bowl the juice of half a pomegranate, crushed garlic, extra virgin olive oil, salt and black pepper to taste.

3) Pour the dressing on the bulgur, celery slices, seeds of pomegranate, parsley, mint, season with salt as to taste.

4) Mix together well, and place into a serving dish.

5) Scatter the walnuts only if serving right away.

*NOTE - If planning on serving this bulgur pilaf recipe hours later, then its best to keep the dressing and bulgur seperate, including the walnuts.  Mix together when ready to serve.

  1. 2/3 cup fine Bulgur
  2. 1 pound celery, cut in thin slices
  3. seeds of 1/2 large pomegranate
  4. 3/4 cup walnuts, roughly chopped
  5. 1 small bunch of flat-leaf parsley, finely chopped
  6. 1 tablespoon fresh mint, finely chopped
  7. juice of 1/2 large pomegranate
  8. 1/2 garlic clove, crushed
  9. Salt to taste
  10. Black pepper to taste
  11. 6 tablespoons extra-virgin olive oil
