Bulgur Salad & Grilled Vegetables & Halloumi Cheese Recipe

Bulgur Pilaf Salad & Grilled Vegetables & Halloumi Cheese Recipe - Halloumi cheese is a great Middle Eastern cheese.  This salad or can be a pilaf as well, is with red bell pepper, bulgur, extra virgin olive oil, using cilantro or basil pesto tossed with whole wheat grain bulgur.

Instructions:

1) In a large mixing bowl add the bulgur with some salt and mix together.

2) Pour over the bulgur the hot water and place to the side for 20 minuutes. 

3) Once the bulgur soaks up most of the water, and is tender, drain the bulgur in a fine colander and squeeze out any excess water.

4) In another mixing bowl, mix together the tomatoes and a sprinkle of salt.  Drizzle a little extra virgin olive oil. 

5) Add the Halloumi cheese to a baking tray and grill for 25 minutes or untili it starts changing color to a nice golden.

6) Chop the almonds, and dry toast in the oven or in a frying pan.

7) Take the bulgur and mix in the pesto.

8) Add the vegetables and cheese to the bulgur and transfer to serving platter.

9) Garnish with the chopped toasted almonds.

10) And serve.

*Note - Like many mixed salads, it is prefered to mix together all the ingredients right before serving.  The preperation can be done earlier.

Ingredients: 
  1. 1 cup of #1 fine bulgur wheat
  2. 1/2 pound Halloumi cheese, cut into 1/4 inch slices
  3. 1/2 cup cherry tomatoes, cut in half
  4. 2 red bell peppers, cut into small pieces
  5. 2 tablespoons cilantro pesto or basil pesto
  6. 4 tablespoons almonds slices
  7. salt and pepper to taste
  8. extra virgin olive oil
