Cabbage Diet Soup

1) In a large heated pot spray with a non stick cooking spray, add the chopped onion, carrots, garlic and saute for 3 minutes. Mix occasionally so that it does not burn.
2) Pour in the beef broth (or chicken / vegetable broth).
3) Add the tomato paste and mix well.
4) Then add the oregano and basil powder, the cabbage and season with salt and pepper to taste.
5) Bring to a boil cover with the lid, then lower the heat simmer for 8 minutes.
6) Remove lid and add the zucchini, celery and simmer for another 5 minutes.
7) Add the green onion and cook for another minute and serve!

- 1 medium onion - finely chopped
- 2 carrots - diagonally chopped
- 4 cloves garlic - crushed
- 1 tablespoon tomato paste
- 1/2 teaspoon oregano powder
- 1/2 basil powder
- 1/2 medium head of cabbage - chopped
- 2 zucchini - chopped
- 3 celery sticks - chopped
- 4 green onions - thinly sliced
- 6 to 8 cups of Beef Broth or Chicken Broth or Vegetable Broth
- salt and pepper to taste
