Cauliflower Soup Recipe

A creamy cauliflower soup that calls for seconds and thirds.  Nothing like a big bowl of soup on a cold day.  This soup will definitely will hit the spot with its great flavor.  It can be a totally vegan recipe by using vegetable broth.  And of course not vegan/vegetarian if you use chicken or beef broth.  Just needs a few ingredients and dinner will be ready in about 30 minutes.

Instructions:

1) In a large soup pot, heat up 2 tablespoons of vegetable oil, saute the onions until translucent and soft ( 5 to 8 minutes)

2) Once the onions are translucent add the cubed potatoes, ground fennel, cumin powder, and cook for about 1 minute.

3) Then pour in the broth, you can use vegetable, beef or chicken broth.

4) Cover the soup pot with a lid and bring the broth to a boil.

5) Take the lid off and then add the cualiflower and mix together well.

6) Cover again with the lid and simmer for 10 minutes. Turn heat off.

7) Puree the soup in a blender or hand blender right in the pot.

8) Put the heat back on and pour in the lemon juice, season with salt and black pepper.

9) Serve into a soup bowl and garnish with chopped green onions and black pepper.

  1. 2 tablespoon vegetable oil
