Great for parties or a snack anytime of day, or perhaps take it with you to work, or pack into your kids lunch. However you serve it, it will be loved, especially with a cheesy center. 1- Preheat the oven to 375 degree F. and thickly grease 9 muffin cups with butter. (if you do not have muffin cups use paper liners)
2- Melt the butter over low heat and set aside.
3- In a mixing bowl, sift together the flour, sugar, salt, baking powder and paprika .
4- In another mixing bowl crack the eggs, add the milk, melted butter,and thyme and whisk to blend.
5- Slowly add the egg mixture to the dry ingredients and stir untill moistened. Mix until smooth.
6- Place a heaped spoonful of batter into the prepared muffin cups. Drop small cubes of cheese over each batter, then top them with another spoonful of batter
7- To insure an all around even baking, 1/2 fill any empty muffen cups with water.
8- Bake the muffins for 20 - 25 minutes or until the muffins are puffed and golden
9-Take the muffins out of the oven and let stand 5 minutes before unmolding onto a cooling rack.
10-Serve warm or at room temperature.
- 1 1/2 cups all purpose flour
- 2 eggs
- 1/2 cup milk
- 2 ounces sharp cheddar cheese cut 1/2 inch dice
- 4 tablespoons butter
- 2 teaspoon baking powder
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon dried thyme
