Chicken Curry made in my kitchen this recipe is from Indian Cuisine and I understand that it is also part of Pakistan's cuisine. Keep in mind that if you overdo the spices and end up with a flaming hot dish you can always reduce the heat by using some milk as it is commonly used to make spicy food more manageable.

Let's start cooking this delicious Chicken Curry. In a pressure cooker or in a regular pot, add the oil, garlic, onion and saute for 3 to 4 minutes until they are slightly browned, add the cumin seeds, coriander powder, jalapeno, turmeric, red pepper powder, paprika, curry powder, curry paste, ginger, and 1 cup of water. Allow to cook on medium heat for about 5 minutes then add the drum sticks and cover the pressure cooker (cooking time is 10 minutes)(follow the instructional manual for pressure cooking) otherwise if using a regular pot (Cook for 20 to 30 minutes) After the chicken is cooked, add the cilantro mix together and cook for another 3 minutes and serve. Some questions I've been asked overtime for chicken curry

Question:If I mix the spices with the fresh chicken and keep it overnight in the fridge before cooking them to let it absorb the spices very well, isn't it gonna give it a better taste?
Answer: The secret of this dish is the sauce. If you like to marinate your chicken then I don't see why not. I suggest you prepare the sauce as it is, let it cool down completely, coat the chicken pieces with the cooled down sauce, then refrigerate covered and cook the next day.
