Coconut Date Cookies - Recipe for Coconut Cookie

Are you a fan of Coconut Cookies? How about Date Cookies?  Well this recipe combines the best of two worlds in this fabulous easy recipe.   It also used ready sugar cookie mix which can be store bought, or you can use our own sugar cookie recipe found on the website. 

The wonderful flavor of coconut combined with the sweet date, together they are harmonious in this Coconut Date Cookies Recipe.  A wonderful cookie to serve your guests, or for that special sweet treat we all deserve.  If you love crispy yet a bit chewy cookies then this is the perfect recipe to give a try. 

Instructions:

1) Start with preheating the oven to 350 degrees F.  Lay parchment paper on the cookie sheets. 

2) Follow the directions on your favorite sugar cookie mix.  A mixture which requires eggs and butter is preferrable. 

3) Mix in the the dates, coconut, and condensed milk.  Also add the 1 3/4 cups of whole grain cereal.   Mix all the ingredients together. 

4) Place each drop of dough with a tablespoon 2 inches apart. 

5) Place the cookie sheet in the preheated oven  and bake for 10 to 14 minutes or until the cookies are lightly browned.  

6) Remove the cookie  sheets from the oven, allow to cool for 5 minutes.  Place on a cooling racks.  

7) Preferrably store the cookies in a  covered tin or container and leave at room temperature.  

Note: Do not freeze these cookies, it will stay well for upto 7 days at room temperature.

  1. 1 pound 1.5 ounce package of your favorite sugar cookie mix
  2. Butter as directed on the sugar cookie package
  3. Egg as directed on the sugar cookie package
  4. 1 cup lightly flaked packed coconut
  5. 1 cup chopped dated (pitted)
  6. 1 3/4 cup whole grain cereal of choice
  7. 1/2 cup sweetened condensed milk (not evaporated milk)
