Eggplant with Nuts Appetizer Recipe - Roasted Baked eggplant with herbs and spices. Tapas (appetizer) is perfect for your dinner table.  The roasted eggplant is topped with onion, garlic, raisin, cinnamon, cumin, coriander, walnuts, cilantro, all saute on a skillet with a little extra virgin olive oil then poured on top of the already roasted eggplant.  Its a fabulous presentation for your guests.  Healthy foods menu does not have to be boring with this recipe.Instructions:Preheat oven 425F Degrees1) Clean the eggplant, cut off the head, then halve lengthwise.2) Sprinkle with salt and pepper to taste and bake in the oven for 30 to 40 minutes on a baking sheet with foil. Cook until tender.3) On a skillet with a little olive oil, soften the chopped onion.4) Once the onion is soft add the garlic, raisins, ground cinnamon, cumin, coriander.5) Mix in the chopped walnuts and coriander (Cilantro) (reserve a little to garnish)6) In a serving dish place the eggplant, then sprinkle the nut and onion mixture ontop.7) Garnish with Coriander leaves (Cilantro)8) Serve with Greek Yogurt, Lemon Wedges and Flat Bread.

  2. olive oil
  3. 1 onion, chopped
  4. 2 garlic cloves, crushed
  5. 1/2 cup raisins
  6. 2 tsp ground cinnamon
  7. 2 tsp ground cumin
  8. 2 tsp ground coriander
  9. handful walnuts, chopped
  10. 1/2 small bunch coriander (Cilantro), chopped, plus extra to garnish
  11. yogurt, to serve
  12. lemon wedges, to serve
