Healthy Garbanzo Bean / Chick Pea Salad

Step 1: Combine in a mixing bowl red onion, tomato, chickpea, parsley

Step 2: In a small bowl, add the garlic, extra virgin olive oil, lemon juice and salt and pepper. Whisk together.

Step 3: Pour the dressing over the salad. Chill for 2 hours before serving.

*NOTE - Chickpea is also known as Garbanzo Beans.

  1. 19 ounces garbanzo beans, drained
  2. 2 tablespoons red onion, chopped
  3. 2 cloves garlic, minced 1 tomato, chopped
  4. 1/2 cup chopped parsley
  5. 3 tablespoons olive oil
  6. 1 tablespoon lemon juice
  7. salt and pepper to taste
