Herb Roasted Chicken with Olives, Bacon and Wine Recipe

Herb Roasted Chicken with Olives, Bacon and Wine Recipe - Lovely recipe that is healthy and low in fat as well.  Cooking up this roast chicken recipe with olives, herbs and spices with bacon and Massala wine.

Instructions:

1) Preheat Oven to 450 Degrees F, place the oven rack in the middle.

2) In a mixing bowl add the chicken, extra virgin olive oil, thyme, rosemary, and season with salt and black pepper.

3) Place a sheet of foil on a baking tray and place the chicken with all the herbs. ( Skin Side Up )

4) Scatter the bacon and garlic ontop of the chicken pieces.

5) Roast in the oven for 15 to 20 minutes.

6) Pour the wine and cook for an additional 10 minutes.

7) Add the olives and roast in the oven for 20 minutes more or until golden brown.

8) Remove from the oven and serve with basmati rice.

 

Ingredients: 
  1. 10 to 12 chicken pieces of choice
  2. 1/4 cup extra-virgin olive oil
  3. 1 1/2 tablespoons thyme, chopped
  4. 1 tablespoon rosemary, chopped
  5. 1 tablespoon sea salt or to taste
  6. 5 garlic cloves, peeled
  7. 2 (1/4-inch-thick) bacon, cut into 1-inch pieces
  8. 1 cup Marsalla wine
  9. 12 oil-cured black olives, pitted
