Kalamata Olive Lemon & Spice Marinade Recipe

Kalamata Olive Lemon & Spice Marinade Recipe - Its so simple to make gourmet olives homemade with fraction of the cost. Some may call it olive salad, but marinated olives with extra virgin olive oil, lemon, and spice topped with a little parsley, and serve as a warm olive appetizer, with some pita bread or flat bread.  A lovely taste of the Mediterranean recipes. Cooking with these recipes will make your dinner table fabulous.


1) In a saucepan add the olive oil, fennel seeds, bay leaf and heat until fragrant. 

2) Add the garlic and cook for 1 minute.

3) Place the olives in the saucepan, cayenne pepper to taste, zest of lemon, juice of lemon, and rosemary leaves.

4) Cook for about 1 to 2 minutes.

5) Turn the heat off, add the parsley, mix together.

6) Place into your serving dish.

7) Serve with your favorite pita bread or other appetizers.

  1. 2 cups black black Kalamata olives
  2. 50ml – 60m extra virgin olive oil
  3. 1 bay leaf
  4. 1 teaspoon fennel seeds
  5. 1 garlic cloves, chopped finely
  6. cayenne pepper, to taste
  7. 1 sprig rosemary – leaves only
  8. zest of 1 lemon
  9. 1 lemon juice
  10. 2 tablespoon parsley, chopped
