Marinated Mushrooms Recipe

Well if it wasn't in a restaurant I wouldn't have tried it but this Russian style Mushroom marinade is mouth watering. I had to try it and that's been a few years now. Something about this marinated mushrooms that just keeps me coming back to make more. Hope you'll like it too.

This is definitely kitchen tested marinated mushrooms recipe. You will find this marinade served at many Russian weddings and I even see it at some Armenian Weddings. Now you know where I first tasted this amazing mushroom marinade recipe.


1) Cut off stems and clean any access dirt off the mushrooms.

2) Place a pot of water on high heat and bring to a boil. Cook the mushrooms for 20 to 25 minutes.

3) In a mixing bowl, add the olive oil, vinegar, fresh dill, garlic, all spice, cloves, black pepper corns, and salt. Mix together.

4) Strain the mushrooms and reserve 1 cup of the water that the mushrooms cooked in.

5) Mix the 1 cup of mushroom water into the marinade. 

6) Place the mushrooms and marinade back into the pot and cook for an additional 5 minutes.  Turn heat off and allow to cool completely.

7) Place the mushroom marinade in the fridge to chill. 

  1. 2 Pounds White Button Mushrooms, whole, sliced or quartered.
  2. 6 to 8 cups of water
  3. 1/2 cup extra virgin olive oil
  4. 1/2 cup red wine, white wine or rice wine vinegar
  5. hand full of fresh dill, off stems and separated.
  6. 5 to 6 garlic cloves, sliced thinly
  7. 10 pieces of whole all spice
  8. 1/2 teaspoon whole black peppercorns
  9. 2 teaspoon salt
  10. 1 cup of reserved mushroom water
  11. fresh dill to garnish (optional)
