Moussaaka Recipe

Moussaaka A classic Greek Mediterranean Recipe with layers of eggplant and ground beef or lamb. It make sound more difficult then it is. Try this recipe and you will see how simple it is.

Instructions:

1) Cut both ends of the eggplant off, and cut into bite size chunks.

2) Season the eggplant in a colander over a bowl with salt. The eggplant will sweat and release moisture. (1 Hour)

3) In a large saute pan or frying pan, heat the oil, and saute the eggplants in batches of single layer. (should be browned all over) 

4) Remove the eggplant in a bowl and set aside.

5) Add the onions and saute for few minutes until it becomes soft.

6) Add the meat to the onions and season with salt and black pepper to taste.  Cook on low heat mixing often.

7) Once the meat is browned, add the eggplant and canned tomatoes. garbanzo beans, red pepper paste, tomato paste, and crushed garlic.

8) Mix together and simmer for 25 to 30 minutes.

9) Mix in the fresh basil. Cook for an additional 5 minutes.

10) Best served with rice and pita bread.

  1. 2 pounds, Italian eggplants, cut into bite size pieces
  2. 1 pound ground beef
  3. 1 onion, finely chopped
  4. 1 can(15 oz) diced tomatoes
  5. 4 to 5 cloves garlic, crushed
  6. 1 tablespoon tomato paste
  7. 1 teaspoon red pepper paste
  8. salt to taste
  9. pepper to taste
  10. 1 can (15 oz)Garbanzo beans
  11. Extra virgin olive oil
  12. 2 tablespoon fresh basil, chopped
