Omelet With Vegetables

Yes this is a Vegetarian Omelet. I initially added this recipe to my menu as a way to feed vegetables to my kids. You see they loved omelets but didn't eat any vegetables and this recipe was a success on many fronts. First my kids ate vegetables, second it is quick and easy and third I love the taste too.

Chop the parsley, cut the mushroom into thin slices, finely chop two green onions, finely chop the a red bell pepper about two tablespoons worth, salt and pepper to taste. Remember the green chillis, Jalapenos, are optional and if you're going to use them make sure to finely chop it so you can spread the heat.

Crack the eggs individually and place into a plate or bowl, beat with a fork until mixed well.

In a non stick pan heat the oil. Add the vegetable on the bitten eggs and mix well. Season with salt and pepper. Add the vegetable and egg mixture to the pan and cook for about 1 minutes on high heat, then lower the heat cover and cook for another 5 to 6 minutes. With a large spatula flip over the omelet and cook for additional 10 to 15 second. Then serve.

Funny the only question I usually get asked about this recipe is:
Question or statement: I find it funny how this is called a vegetarian when it has eggs.

My Answer is: Not being a vegetarian I was confused too at one time. Then my daughter explained (she is a vegetarian, That People who don't eat eggs and dairy product are called Vegans).

Ingredients: 
  1. Eggs - 1 to 2 Count - Beaten
  2. Mushrooms - 2 Count - Diced
  3. Tomato - Quarter Medium - Diced
  4. Green Onion - 2 Tablespoon - Diced
  5. Cheese - Cheese of Choice, Cheddar, Monterey Jack
  6. Jalapeno - Half - Seeded and Diced Finely (Optional)
  7. Black Pepper -
  8. Salt - To Taste
  9. Vegetable Oil - 1 Tablespoon
