Recipe For Bran Muffins - Raisin Bran Muffins

Slightly sweet, moist, packed with fiber recipe for bran muffins, raisin bran muffins that is!  Perfect for breakfast, or to take along as a snack to work.  We always bake an assortment of different muffins in our home, and this recipe has always been a favorite.  We hope you will enjoy it as much as we do. 

Directions:

 

Preheat oven to 400 degree  F.

Grease 15 muffin cups or use paper liners.

1- Place butter in a saucepan and melt over low heat.

2-  Sift together the all purpose flour, wheat flour, cinnamon, baking soda and salt in a mixing bowl.

3- Add the bran, raisins and sugar and mix well to blend.

4- In another bowl, mix together the egg, buttermilk, lemon juice and melted butter

5- add the buttermilk mixture over the dry ingredients and stir quickly and lightly until the dry ingredients are moistened. Do not beat and do not stir until smooth.

6- Spoon the batter into the prepared muffin cups, filling them just short of the top. If there is empty cups left fill them half with water.

7- Bake in the preheated oven for about 15-20 minutes or until the muffins turn golden color.

Serve at room temperature.

  1. 2/3 cup all purpose flour
  2. 1/2 cup whole wheat flour
  3. 1/2 cup bran
  4. 1/2 cup raisins
  5. 1/4 cup dark brown sugar firmly packed
  6. 1 egg
  7. 1 cup buttermilk
  8. 1/4 cup granulated sugar
  9. 4 tablespoon butter
  10. 1 1/2 teaspoon baking soda
  11. 1/8 teaspoon salt
  12. 1 teaspoon ground cinnamon
  13. juice of 1/2 lemon
