Raw Lamb Liver Salad Is Popular In Sudan and Egypt, it might be popular in other countries too but these are the two I'm aware of. Raw lamb liver salad must be prepared fresh and consumed fresh. It used to be perscribed by doctors for people who were anemic. It is very spicy, but delicious too.
This recipe is for those who like to eat a raw food diet It has always been called a salad, but it can definitely be served as a side dish.. I do not prepare this often, but only a few times a year if that. But none the less a great quick recipe for the liver enthusiasts.
In Sudan if you are served this popular cuisine then you are a guest of honor and are being highly respected.
It is called Marara but I couldn't find much about it online but that is what they called it. As I put together this video it was evident that most members of my family were eager to eat this raw liver salad. I say most because it brought back memories and they are used to eating it. But those who were born and raised here in the United States didn't even want to taste it.

1) Cut the liver into cubes and meanwhile clean and remove any fat or membranes.
2) Place into a mixing bowl.
3) Add the onions, lemon juice, cayenne pepper and salt to taste.
4) Mix alll the ingredients together and let stand for 5 minutes before serving.
