Red Lentil Soup Recipe

Red lentil soup is one of my favorite Middle Eastern soups for those cold winter nights. Served with crouton, segments of brown onions seasonal greens and pickles It is a very satisfying and nutritious meal. Red lentil soup is healthy, easy, and quick to prepare.

The FDA has announced the lentil to be among the 10 most nutritious food in the world. I think this is one of my easy soup recipes so do give it a try. Some people add BULGUR to the soup instead of rice and use butter or ghee instead of oil to fry the onions.

Lentil soup prepared this way is called maklouta or makhlouta in the Middle East. Boil the water in a medium size pot, add the red lentil and rice add the red Bell Peppers, few pieces of carrots and the onion chunks. Cook for 20 to 25 minutes or until the lentil is cooked. Add only 1/4 Teaspoon of Cumin powder and save the rest for for later. Cover with lid and simmer on medium high for 15 to 20 minutes. Check in 10 minutes and add water if needed. Reduce the heat and blend the soup with a hand blender. Pour the 1/4 cup of oil in a pan and cook the finely chopped onions for 3 to 4 minutes until golden in color. Transfer the soup to a serving bowl, put some fried onions with oil on the soup in the serving bowl. Add some Croutons and sprinkle some cumin over it. Ingredients: 
  1. 1 Cup red Lentil
  2. 1 Tablespoon rice (Optional)
  3. 1 Teaspoon Cumin powder
  4. 1/2 Teaspoon Chili flakes
  5. 1/2 Medium size red bell pepper cut into 1/2 inch squares.
  6. Salt to taste
  7. 1 Medium onion finely chopped
  8. 1 Carrot cut into 1 1/2 inch in length
  9. 1/2 Onion Cut into Chunks
  10. Some Croutons
  11. 1/4 Cup of Vegetable oil
