Rice Pilaf With Fennel & Golden Raisins Recipe

Rice Pilaf With Fennel & Golden Raisins Sultanas Recipe - A lovely combination of flavors in this simple rice recipe.  Why have just boiled rice when with just a few ingredients you will have a awesome rice side dish to serve for your dinner guests or treat yourself. Dress it up with a garnish of raisins and you are set.


1) In a sauce pot, heat the olive oil slightly.

2) Add the onion, fennel, raisins and fennel seeds, salt and black pepper and cook down until the onions are soft.

3) Add the uncooked rice in the onion mixture and cook together for a minute or so.

4) Pour the water onto the rice and bring to a boil.

5) Reduce the heat to medium low and cover the sauce pot and cover with a lid. Cook until all the water has absordbed about 20 to 25 minutes.

6) Remove from the heat and allow to settle for 10 minutes.

7) Fluff with a fork, and place into a serving platter when ready to serve.

8) Garnish with golden raisins (optional)

  1. 1 medium onion, chopped (1 cup)
  2. 1 large fennel bulb (stalks discarded), chopped (2 cups)
  3. 1/3 cup golden raisins (optional)
  4. 1/2 teaspoon fennel seeds, lightly crushed
  5. 3 tablespoons extra-virgin olive oil
  6. 1 cup medium or long-grain white rice
  7. 2 cups water
