Roman-style Chicken

Easy Roman Style Chicken Recipes by Giada De Laurentiis from Food Network.  Who doesn't love a quick and easy Italian Recipes from Giada De Laurentiis.  Cooked in a white wine sauce served topped with capers and fresh chopped Italian parsley.  In less then 30 minutes you will be on your way to an authentic easy and delicious Roman style Chicken Recipe.

 

 

Directions:

1) Sprinkle salt and black pepper on the chicken.

2) Meanwhile heat the oil in a large skillet and cook the chicken until golden brown on both sides.  Remove the chicken from the skillet and set aside.

3) Using the same skillet add the prosciutto, peppers and cook together until the prosciutto is crisp and browned.

4) Add the crushed garlic and toss together for about 1 minute.

5) Pour in the wine, tomatoes and herbs and with a wooden spoon scrape the bits left from the prosciutto off from the bottom of the pan. (This does add a lot of flavor)

6) Place the chicken browned earlier to the skillet with the wine sauce and cook at a simmer for about 25 to 30 minutes.

*NOTE - Before serving, sprinkle the capers and parsley, mix together and serve.  (Its important to note that the capers and parsley need to be added only when about to serve)

Ingredients: 
  1. 6 skinless chicken pieces
  2. 1/2 teaspoon freshly ground black pepper, plus 1 teaspoon
  3. 1/4 cup olive oil
  4. 1 red bell pepper, sliced
  5. 1 yellow bell pepper, sliced
  6. 3 ounces prosciutto, chopped
  7. 2 cloves garlic, chopped
  8. 15 ounce can diced tomatoes
  9. 1/2 cup white wine
  10. 1 tablespoon fresh thyme leaves
  11. 1 teaspoon fresh oregano leaves
  12. 1/2 cup chicken stock
  13. 2 tablespoons capers
  14. 1/4 cup fresh parsley, chopped
  15. Salt to taste
