Spaghetti and Meat Sauce

To make the meat sauce:

1) In a large Dutch oven add the bacon 6 ounces cut into strips. Crisp and render for 25 to 30 minutes. Remove bacon only.

2) Using the bacon fat, caramelize the onion, with salt and black pepper. Also in a small spice bag, add the star anise and clove and place into the pot. Cooking uncovered on low heat, stirring occasionally for 45 to 60 minutes. Remove Spice Bag.

3) In the meantime In another saute pan on high heat, heat a tablespoon of olive oil.

4) As soon as the oil is hot add the beef and pork, stirring frequently. Brown the meat for 5 minutes.

5) Remove the meat on a colander and allow to drain

6) Bring the pan back to high heat and add 1/2 cup of wine and scrap the bottom of the pan where all the little bits of meat are.

7) Pour the wine mixture and the meat onto the onions in the Dutch oven.

8) Then pour in the evaporated milk, beef broth, another 1/2 cup of wine, mushrooms and stir together to combine.

9) Reduce the heat to low and cook for 3 hours, mixing occasionally.

10) After the sauce has been cooking half way (1 1/2 hours) Saute the sliced garlic in 1 tablespoon of olive oil. Do not let the garlic to brown.

11) Add the tomatoes, basil, oregano, marjoram into the saute pan and cook for 30 minutes, then add 1/4 cup wine, ketchup, vinegar, tomato paste, Worcestershire sauce and after another 30 minutes stir in another tablespoon of olive oil.

12) Cook on low for 30 minutes, simmer.

13) Pour the tomato sauce into the Dutch oven and combine.

14) Cook uncovered on low heat.

15) Meanwhile in a pot of boiling water, cook the pasta. Cook for 5 to 6 minutes until al dente. Drain.

16) Add the pasta to the meat sauce and cook for another 2 to 3 minutes.

17) Sprinkle the Parmesan cheese on to the spaghetti and meat sauce and mix together.

18) Serve, with a little Parmesan on top.

  11. 8 ounces coarsely ground pork butt
  12. 1 1/4 cups white wine, divided
  13. 3/4 cup evaporated milk
  14. 3 cups beef broth
  15. 1-ounce dried porcini mushrooms, finely chopped
  16. 2 (28-ounce) cans diced tomatoes
  17. 1 tablespoon dried oregano
  18. 2 teaspoons dried basil
  19. 2 teaspoons dried marjoram
  20. 2 tablespoons tomato paste
  21. 1 tablespoon ketchup
  22. 1 tablespoon sherry vinegar
  23. 1 teaspoon Worcestershire sauce
  24. 1/3 cup finely grated Parmesan
  25. 1/2 pound spaghetti
