Spaghetti Frittata

by Ellie Krieger from Food Network Egg Recipes.  Spinach Frittata with eggs and topped with cheese is so simple to make.  Frittatas are not just served for breakfast anymore, its so good that it can be served any time of day.Instead of using spaghetti, you can use any type of pasta you prefer.In this Food Network cooking recipe host is Ellie Krieger and she really knows her Frittatas. Kids will love this spaghetti frittata as well, and they wont even know they are eating spinach!


1) In a pot of boiling water, cook the pasta for 5 to 6 minutes. Drain. Mix together with marinara sauce.

2) Separate the 5 egg whites from the yolks and place into a bowl.  Then add another 5 whole eggs to the same bowl and beat together. 

3) In a large oven proof skillet, heat the oil and add the onion.  Cook the onions until soft.

4) Add the sun dried tomatoes, spinach, garlic, then season with salt and black pepper.  Cook for about 1 minutes or until the spinach has wilted.

5) Then add the pasta and combine well with the spinach mixture.

7) Pour in the whisked eggs. 

8) Cook for 6 to 8 minutes.  Eggs will be set on the sides but not in the middle.

9) Sprinkle with cheese and place the frittata into a preheated broiler. 

10) Once the middle is set and golden brown about 2 to 3 minutes, remove with oven mit out of the oven. 

11) Cut into wedges.  Enjoy!

  1. 10 eggs (5 whole eggs and 5 egg whites)
  2. 1 tablespoon olive oil
  3. 1 small onion, thinly sliced
  4. 1 bunch fresh spinach, washed, dried and coarsely chopped (5 cups)
  5. 1/4 cup sun-dried tomatoes, reconstituted in boiling water for 10 minutes, chopped
  6. 1 garlic clove, minced
  7. 1/4 teaspoon freshly ground black pepper
  8. 2 cups cooked whole-wheat spaghetti tossed with 1/2 cup marinara sauce
  9. 1/3 cup grated Parmesan
  10. salt to taste
