Thai Food - Thai Cucumber Relish recipe with fresh and healthy herbs and spices.  Authentic recipe with agave syrup, vinegar, turmeric. Easy to make and perfect by your favorite summer BBQ grill recipes. Add this lovely refreshing side dish to your menu.


1) Use any cucumber of choice, make sure to seed the cucumber and chop into half moons.

2)To make the dressing, in a mixing bowl add the salt, agave syrup or sugar, vinegar, fish sauce and mix together well.

3) With the cucumbers there are many other fresh spices that can be used.  For instance to make the relish spicy use the green chilies, radish, shallots, ginger, fresh turmeric, mint and cilantro.  Each one of these add on's will enhance the flavor of the relish.

4) Pour the dressing over all the vegetables and spices and mix together. 

5) Leave in the fridge 1 hour and serve. 

*NOTE - Depending how much of cucumbers added, dressing can be doubled to coat the relish well.



  1. 3 Cucumbers, seeded and sliced
  2. 1/4 teaspoon salt
  3. 1 tablespoon agave syrup or 1 tablespoon of sugar
  4. 1 1/2 white distilled vinegar
  5. 1 teaspoon fish sauce
  6. green chilies
  7. radish - sliced
  8. shallots (optional) thinly sliced
  9. fresh ginger (optional) thinly sliced
  10. fresh turmeric (optional) thinly sliced
  11. mint (optional) chopped
  12. cilantro (optional) chopped
