Tomato Salad Recipe

A Simple, yet full of color and flavor, recipe that can be added to any diet plan. I love to make and eat salads and time and again this recipe makes it into my plans.

We first tried this recipe when we were visiting Lebanon, it is part of Arabic cuisine, a Middle Eastern salad recipe to savor.

Tomato Salad Recipe Ingredients include  -  Cucumber, green onion, bell pepper, parsley, fresh mint leaves, Aleppo Pepper, extra virgin olive oil and seasoned with salt.  Its a lovely and refreshing salad perfect for gatherings parties, BBQ's.

Instructions:

1) In a Bowl, dice finely the tomatoes, cucumbers, bell pepper, and green onions.

2) Finely chop the parsley and include in the bowl.

3) To prepare the dressing tomato salad, in a separate bowl, add the mint, lemon, olive oil, garlic, Aleppo Pepper( if you cant find Aleppo Pepper, you can make this salad also with Paprika) If you would like to spice the Tomato Salad up, then include a fresh chili pepper and or Cayenne Pepper to taste.

4) When ready to serve, pour the dressing over the tomato mixture. Toss well. Garnish with few mint leaves or parsley sprigs.

*NOTE - This salad can be served with a variety of main courses. Traditionally it is eaten with pita bread or french bread. Thanks

*NOTE - Aleppo Pepper is usually found at most Middle Eastern Markets.

  1. 3 medium tomatoes chopped cut to small pieces
  2. 2 Persian cucumber washed peeled and chopped

  6. few fresh mint leaves (half a teaspoon dry mint)
  7. 2 tsp Aleppo pepper powder (or paprika)
  8. 1 small garlic pressed
  9. 2 to 3 tbsp extra virgin olive oil
  10. salt to taste
Tomato salad is delicious on its own. It is a greatly appreciated when served with beef, chicken or fish. Tomato salad is a great accompaniment for The lentil Koufta and Chi koufta.
