White Chocolate Macadamia Cookies Recipe - White Chocolate Macadamia Nut Cookies

1) Preheat oven to 375 degree

2) Line parchment paper on the cookie sheets. 

3) Dry ingredience:  In a mixing bowl, add the baking soda, salt, and flour, and mix together.  

4) Wet ingredience: In another mixing bowl, With an electric mixer, beat the butter, granulated sugar and brown sugar, beat with the mixer until smooth.  

5) To the wet ingredience, blend in the pumpkin and egg. 

6) Now that all the wet ingredients are well combined, add the dry mixture and blend in with the wet.

7) Add the macadamia nuts, oats and white chocolate chips(1 cup). Combine well. 

8) Dallop a spoonful of dough onto the parchment paper, keeping them about 2 inches apart. 

9) Bake in the preheated oven for 12 minutes or until lightly browned. 

10) In a small saucepan, add 1/2 cup of chocolate chips and cook on medium high heat for 1 minute until all the chocolate has melted. 

11) Top the melted white chocolate on top of the cookie in. Place on waxed paper until set.

  1. 1 cup granulated sugar
  2. 1 cup packed brown sugar
  3. 1/2 cup canned pumpkin
  4. 1 egg
  5. 2 cups all purpose flour
  6. 1 teaspoon baking soda
  7. 1/2 teaspoon salt
  8. 3/4 cup butter, softened
  9. 1 cup quick cooking oats
  10. 1 cup chopped macadamia nuts (toasted)
  11. 1 1/2 cups white vanilla baking chips
