Zucchini Casserole Recipe - Recipe for Zucchini Casserole

Fresh summer flavors in this simple vegetable recipe with fresh tomatoes and zucchini casserole.  Perfect served by your favourite grilled meats, poultry and even fish.  Or serve it as a main course or as a side dish.  It is hearty and flavorful and surely a hit on the dinner table!


1) Preheat oven to 375 degrees F (190 degrees C)

2) Using a 9 x 9 inch pan or casserole dish, lightly butter the bottom and all edges. 

3) In a large bowl add the Parmesan cheese, Cheddar Cheese, basil, oregano, garlic. Season with salt and black pepper. 

4) Slice up the zucchini and place half the amount on the pan. 

5) Spread 1/4 of the herb and cheese mixture on top of the zucchini.  

6) Then arrange half of the tomatoes on top of the cheese mixture.

7) Sprinkle another 1/4 of the cheese mixture on the tomatoes. 

8) Repeat layers. 

9) In a heated skillet, melt the butter.  
10) Once the butter has melted stir in the chopped onions and cook until translucent and soft. 
11)  In the onion mixture once it has become soft stir in the breadcrumsb and allow it to absorb the butter. 
12) Sprink the onion and bread crumb mixture on top of the casserole
13) Take a large piece of foil and cover loosely over the pan.
14) Bake in the preheated oven for 25 to 30 minutes. 
15)  Remove foil, and bake until the top is crusty and the vegetables are tender, about 20 minutes.
16) Remove the foil and bake uncovered for an additional 15 to 20 minutes or until the vegeteables are tender and the top is crusty.
17) Ready to serve! Enjoy!
  1. 1/3 cup grated Parmesan cheese
  2. 1 1/2 cups grated Cheddar cheese
  3. 1/2 teaspoon dried basil
  4. 1/2 teaspoon dried oregano
  5. 2 cloves garlic, minced
  6. salt to taste
  7. black pepper to taste
  8. 2 to 3 medium zucchinis, thinly sliced
  9. 4 to 5 plum tomatoes, thinly sliced
  10. 1/4 cup butter
  11. 1 small onion, finely chopped
  12. 3/4 cup bread crumbs (unflavored)
